Cottage cheese dumplings from this recipe are basically a classic lazy dumplings, only without the addition of flour. This makes them less caloric, but still providing a good portion of protein that boosts our metabolism even more than carbohydrates.
If you like a lazy dumplings for their distinct flavor, you will definitely like cottage cheese dumplings. They are delicious both hot and cold or as a lunchbox to take with you. I also recommend them as a replacement for rice, groats or potatoes for dinner.
RECIPE
The lack of flour in the recipe makes the dough not as tight as in the case of lazy dumplings, thus it is more convenient to form each dumpling separately then cut them off from the roll.
INGREDIENTS:
- 140 g cottage cheese
- 1 egg
- 2 spoon oat bran (ca 8 g)
- 1 spoon potato starch (ca 10 g)
PREPARATION:
- Squeeze out the cottage cheese to get rid of excess water and mash it with a fork.
- Stir in the rest of the ingredients.
- Form dumplings in any shape (I take a portion of dough with a spoon and put it into boiling water)
- Boil the water and reduce the heat so that it bubbles gently
- Put dumplings into boiling water and cook for 3 minutes from the moment they surface.
- Can be served alone, with a light sauce or vegetables.
