As always a week before important race I follow a carb-loading diet. The first three days are to deplete glycogen from the body, so the products must be based on protein and sufficient fat content, with the minimum amount of carbs. I usually begin this diet with bran pancakes – it’s a kind of my ritual already. They contain a lot of fiber, which gives a feeling of satiety and promotes the survival of this first stage, which is quite hard for the body – suddenly carbs, main athlete’s fuel, get cut off. Fortunately, on the fourth day begins the sugar feast, and the muscles absorb everything like a sponge, until you start to sweat glycogen :)
But first you have to survive this drought …
RECIPE
Preparation is very easy and takes only a few minutes. You can prepare them in a classic way, with a pinch of salt (neutral in flavor go well with various pastes and additives), or season them any way you want. I mostly do them classic or with curry, curcuma and smoked paprika, as classic pancakes. You can also do a sweet version as well – with cinnamon, ginger and some sweetener (do not use sugar or honey!) – this way I like them better as waffles.
INGREDIENTS:
- 4 tbsp oat bran
- 2 tbsp wheat bran
- 1 egg (or egg white only)
- 3-4 tbsp cream cheese or low fat yoghurt (or a mix of both)
- favourite spices
PREPARATION:
- In a bowl, mix all ingredients. The mixture must be thick, but spreadable. If it is too thick, you can add water or milk.
- You can cook it right away, but I recommend putting aside in the refrigerator for a few minutes for the bran to absorb a little liquid.
- Fry like pancakes of prepare them in a waffle maker.
