Today I offer you a quick and simple recipe – a spanish tortilla, i.e. omelette with potatoes. In Spain it is supposed to be eaten cold… for me, an omelette must be hot! The tortilla is a great idea for a quick dinner or supper (half a serving). It is a balanced meal rich in carbohydrates, complete protein and healthy fats. You can modify it by the addition of spinach or sun-dried tomatoes, or create even more interesting combinations. Just don’t add to many – it still must be quick and simple ;-)
RECIPE
INGREDIENTS:
- 2 everage potatoes
- 3 eggs
- 100 g fresh spinach
- 1/2 onion
- 2 garlic cloves
- 20 gfeta cheese
- salt, pepper, oregano
PREPARATION:
- Peel the potatoes and cut into slices. Toss them raw onto the pan and fry for approx. 5 minutes.
- Cut onion and garlic into slices and add to browned potatoes.
- When the onion and garlic are glazed, add the spinach and fry until softened.
- Beat up the eggs, season to taste (eg. salt, pepper, oregano) and pour the mass on the pan.
- Crumble the feta cheese in, cover the pan and cook for a while.
- You can finish preparing tortilla in the oven or by turning the tortilla to the other side on the pan.
